One thing that I've never looked into is how to set things up to pack shells over numerous udims.
Say I want to pack my shells into 10 udims, where's the setting to show 10 udims?

| Ok, I forgot that it makes udims automatically once you drag a shell out of the udim but what about 'pack all'. This seems to only work with one udim. What if I want a selection to pack within a different udim? Make a box? |

I think you are after the "Tile" settings. If you want a "udim" of 10, then set the Tile dimensions to 10 x 1.
