I searched in the documentation but could find anything on a redo action.
Does this mean there is no redo????

Correct, there is currently *no* redo.

And why isn't there this function? this is crazy that this lovely tool haven't it, sometimes i press undo too often accidentally and then need redo

A redo is definitely on the wish list, but I'd probably give multiple UV layers/sets a higher priority, so a redo function probably wont be happening soon.
