Is there a quick way to flatten all the uv shells at once? I did a search on the forum and didn't find anything on it.

If you have a lot of shells detached in the "Ed" view, you can drop all of those to UV space with the usual 'D' hotkey. Instead of aiming the mouse pointer at an individual shell as you normally would, aim at nothing (i.e. aim the mouse pointer at some of the background), then LMB stretch a box around the shells you want to drop.
If you're in the "UV" view and have a lot of dropped by not flattened shells, use the 'F' hotkey in the same way ... aim at the background, then LMB stretch a box around the shells you want to flatten. Once flattened, you can then use the Optimize "Run For" button to finish off.
