After dropping something into UV space you still need to use F or Shift-F to actually flatten it out. The Basic-Flattening and Split-and-Stretch movies go through these steps.
You might want to split your body up into a few smaller pieces first though, at least arms and legs separated from torso. This will make the flattening run faster, and you can always weld them back into the flattened torso afterwards.

You are getting there I think.
Now its roughly flattened, you would use the 'S' hotkey to make it symmetrical and "upright", then flatten some more with F or the Optimize Run For button. You might also need to use Shift-T on the neck opening ... this puts in some invisible webbing that'll hold it open.

The foot to me looks like its missing a split line. Sometimes you need to do the Shift-S more than once to open up *all* the cuts before dropping that shell to UV space. This is a bug that I just haven't gotten round to fixing yet.
What you could do now is to undrop that foot (Shift-D), remark the missing split line and Shift-S to open it up, then redrop and flatten as before.
