I know this was addressed in UVLayout-Symmetry-Find-2.mov, in the advanced movies section, where the pants weren't connected. I wonder if this was ever resolved? I have unconnected symmetrical geometry that I'd like to use Find Symmetry on if possible. In this case it's really simple geometry so it's not the end of the world if I have to do both sides manually, or even just uv one side and clone across the x-axis, but if I ever come up against a more complicated case I'd like to know if I have another option.
I'm using version 2.06.02 of UVLayout.

Watch that video all the way through; there's a bit tacked on the end about how to handle symmetry on unconnected parts.
You could also do it by flattening one side without symmetry turned on, then use the Copy UVs tool to achieve the same end result. The advantage of the symmetry tool though is that you can make changes afterwards and they're mirrored automatically.
