I've tried to follow the main tutorials, but the entire window that contains optimize and everything below it is simply not visible. I've pressed display several times, to no avail. Has it been stripped from the demo version?

Yes, the Demo version is missing those tools.

If you click on the "About UVLayout" button at the top of the GUI, you'll see buttons for "Try Professional Version" and "Try Hobbyist Version" ... click on these and Optimize, Pack etc are then available so you can try them out, but the save buttons are disabled.
