I have a problem where i only need to cut 2 edges but when i cut them it makes the cut itself...(the yellow and red cuts) I understand the red ones are user defined and yellow ones follow along...is there anyway to only cut 1 edge at a time for complete control? thanks guys!

Yep. Look for "Edge Extend" mid way down the GUI ... the choice you want is "0". You can also use the "W" hotkey to untag cut edges, and it'll eat up the yellow ones until it hits a red one.
