I am in my first attemp with this outstanding program...
for the moment i was unable to unselect the point show in the image below also i was unable to restores symmetry pressing the S key

The green points are pinned, so you can un-pin those individually with P, or a span of adjacent pinned points with Shift-P.
The magenta/purple points are used for a number of things, but probably whats happened is that you've had the mouse pointer over one of the boundary points when hitting the S key. UVLayout has a number of location sensitive hotkeys, meaning that the same key will do different things depending on if its over a point, over an edge, over an internal poly, or aimed at nothing. Anyway, you can un-tag them with S.
Regarding the "cant copy" error, I think I can see some yellow polys around the nostrils. These indicate areas where the topology one either side of the mirror line doesn't match. Zoom in and show us a shot of that in details and I'll know for sure.
