I have a character who has some symmetrical body parts (legs and arms specifically). Is headus able to match certain cuts or match alignment to facilitate the process of doing uvs on identical parts?

Yes, the "Symmetry Find" tool, currently only available in the Pro version, can be used for that. If you go to this page ...
