flatten hemisphere with a weird result

This sphere is subdivisions axis 32 and subdivisions height 16 in maya, then I send it to UV layout, and cut it in the middle to 2 hemispheres. If I press F too long, the result is left, I have to keep clicking F to get right result.Why?

Because you are squashing a hemisphere down completely flat, there is a lot of compression pressure placed on those center polygons (the red tinted ones). The ones that are long and narrow have "fallen over" under the downward force; just like tall narrow blocks would be in the real world, these ones are less stable.

So that's "why", but really you don't want to know the gritty details, you just want it to go away, right? So I'd suggest next time it happens, try the Shift-B hotkey. That expands the shell a bit and reflattens, and that might help to apply that compression pressure more gently to start with so the long narrow polys don't fall over. If that doesn't help, pin the boundary with Shift-P, then slightly enlarge the shell with Space-RMB, then reflatten. That will reduce the pressure on the center, transferring it to stretching around the boundary.
