Hi,
I have recently purchased a student license for UV Layout, and thus far I am very impressed with the program.
I have a question, however. As the student version does not come with the 'find symmetry' tool, what is the best way to unfold two objects which are supposed to be identical (i.e. hands)? Can I select both UV shells and unfold at the same time or do I have to unfold one at a time and give it my best guess?

First cut up and flatten one hand, then make the same cuts to the second hand and flatten it out as well. Then flip one of them over with the left or right arrow key and use the "Stack" tool to make the boundary shapes the same. You can read about that tool here ...

If the 3D geometry of each hand is exactly the same, you can then reflatten both pinned hand shells and the internal UVs should end up in exactly the same places. When done, you can unflip that second hand with the arrow keys again.
The stack tool can also be used to make a single shell symmetrical about its mirror axis.
