If you mark the symmetry on the mesh then if you hover your mouse over a shell and tap "S" it'll make the left and right side UVs the same (symmetrical) for the selected shell.

Triangulate it manually so it's symmetrical, is what I'd do. It's only a couple of polies. It'd be pretty easy. You could also redo that area so it's only made up of quads. That's more work though. :w ... |

Try using the "G" hotkey to mark the area you want to separate and, with your mouse hovering over the selected area, hit "enter". Then with "Space+MMB" you can move the detached piece.

What about "locking the stacks together" so everything in the stack is treated as a single item for locking, unlocking, moving, etc... |
